Quick Summer Lunchtime Salad

I thought that you all would like to try this salad. Peter andI like this with some Lime Jello afterwards.

Cracker Salad

Ingredients:
1 sleeve saltine crackers*
1 large tomato, finely chopped
3 green onions, finely chopped
1-1/2 cups mayonnaise*
1 hard-boiled egg, finely chopped

Instructions:
Crush crackers. Mix all ingredients together and serve immediately.

*You can substitute the saltines with no-salt saltines. You can really use any type of cracker. The mayonnaise can also be low-fat. I've also thrown in 1 cup chopped pepperoni for this and it was to die for...lol
