Thanks to their use as potato chips and salt loaded fries, potatoes seem to have been turned into villains over the years-at least in my family :D Why am I so nervous about them? Surely, served in a low fat manner without heavy sauces or butter, they are fine right? Why do they make me see lbs every time I crave them?

Because although they're classed as vegetables, potatoes are also carbs. Add to that all the fattening things we turn them into, fries, chips, and all the stuff we add like butter and bacon bits, it's hard to see the health in them. We eat a lot of potatoes here. Usually all I do is mash them with a bit of milk. I consider it a way to get two servings of veggies in my kids.
I am a starch lover and have been for many years. I am not too keen on salt though I just use a little seasoning depending on what I am eating and I'm all good.

If you eat them with the skins, you are giving yourself fiber and vitamins along with the carbs. Without the skins, there isn't much to a potato. And slather on butter or gravies, and they are all the worse. Still, I think a potato is better than a slice of white bread, because at least it's unprocessed!

There really isn't all that much bad about a potato as it grows. We too eat a lot of them, and just don't add fats to them. Sometimes garlic is nice though.
Skins are great if you can tolerate them.

Our family has always been big potato eaters. However, we have scaled back quite a bit the last couple years and we are trying to learn to enjoy sweet potatoes which have a lot more health benefits.

So as long as I cook them in a healthy manner, I am ok. And if I leave the skins on then even better?
That all seems reasonable. I have missed potatoes as a part of our life!
I love me some potatoes! I have always been one for starches and finally have just gotten into eating the skins again. I love potato wedges if that counts for anything and people always tell me the skin is the best part but what can I say I'm hard headed.
I am a potato lover myself, I do it different ways, mashed with butter or milk or just cooked and served with meat or leafy veggies like kale or pak choi.
We eat a lot of potatos in my family. I like slathering butter and pepper on them, not healthy I know but delicious! Really though, to make a potato better, add pepper or lemon pepper or garlic.
