Here is a really easy recipe for enchiladas my family loves. Brown a pound of ground beef and drain. Put meat back in skillet with one can of tomato soup and a large can of enchilada red sauce. Let simmer together for 15 minutes. Take a large baking dish and a burrito size tortilla place a drained spoonful of filling and some shredded cheese in each tortilla and roll up and place in dish. Pour remaining filling and liquid on top of rolled and filled tortillas sprinkle with cheese and place in hot oven until cheese melts. Top with sour cream before serving.
