Favorite Snacks

Does anyone have any recipes for snacks (or meals) that would be good for helping an 8 year old learn basic measurements, etc. My daughter wants to help in the kitchen, but she gets frustrated when there isn't much for her to do. I was thinking with summer here, it would be nice to have some recipes to do with her where she could have a bigger role in preparing.

I'm thinking some kind of granola or a trail mix would be fun and easy. Also, I have been thinking of making my own pudding pops for the kids this summer. It's pretty easy to mix up pudding - maybe she would like that.
