Lite summer meals

Anyone have any lite summer meals that you make when the weather is hot?

I like to go for the cold soups and salads, jello, sandwiches, pasta salads. I keep yogurt and homemade juice pops in the freezer. I even freeze grapes. On Sundays, I usually pop a beef roast in the crockpot with some vegetables, early in the morning. Any baking, I do early also. The place is cooled down when the heat gets really bad during the day.

Cold soups? Likw what? I go for the pasta salads as well. You can throw just about anything in with pasta. I make fruit salads to.

2nite im doing asian chicken salad. Need to find mandarin oranges and won ton noodles, but will make a quick dressing with rice vinegar, garlic, ginger, sesame oil, salt, and pepper. Toss with lettuce and grilled chicken and it tastes like a restaurant.

I like to make cold noodles soup for my boy when it gets too hot, esp Mar to Jun. it is something like what the Koreans eat during summer. I put lots of julienned cucumber and ham coz he loves the combination.
