My previous post reminded me of my favorite snack of all time, carrots! For this recipe, we're using baby carrots-which I think is more delicious than regular carrots. It would be tastier if you use baby carrots that still have their tops.

Recipe:
Steamed baby carrot with garlic & ginger butter-Serves 4.
Ingredients:
- 2 garlic cloves, minced
- 1 pound baby carrots with tops, peeled
- 1 tablespoon butter
- 1 teaspoon minced peeled fresh ginger
- 1 tablespoon chopped fresh cilantro
- 1/2 teaspoon grated lime rind
- 1 tablespoon fresh lime juice
- 1/4 teaspoon salt
Preparation:
1. Mince garlic, then let alone for 10 minutes.
2. Cover carrots in steamer, steam for 10 minutes or till tender.
3. Heat butter in large nonstick skillet over medium heat. Add garlic and ginger to pan-stir constantly for 1 minute.
4. Remove from heat. Stir in carrots, cilantro, and the rest of ingredients.
5. Serve!
